Start with clean water

Tasting notes should help, not intimidate.

We use tasting notes to describe what is useful in the cup: sweetness, body, balance, acidity, finish, and how the coffee behaves in real brewing. No one needs to pretend they found moonlit apricot if what they really taste is chocolate and a good morning.
